Calabash Catering Co. was born in a home kitchen in Castries. Chef Nadine Charles grew up watching her grandmother prepare Sunday lunch for the entire neighbourhood — jerk chicken, callaloo soup, stewed saltfish, and enough rice to feed the whole street. That spirit never left her.

What started as cooking for friends became a business built on one rule: nothing leaves this kitchen unless it's been cooked fresh that morning. No reheating. No shortcuts. No compromises. Real Caribbean food, made properly, every day.
